How to Make It
Stir together apples, sugar, lemon juice, and water in a 6-quart programmable electric pressure cooker. Place cardamom and cinnamon in center of 1 layer of cheesecloth; tie into a bundle. Place spice pouch in cooker.
Close and lock lid of cooker; turn pressure release valve to sealing position. Program cooker to cook on Manual on High Pressure for 2 minutes. Turn pressure valve to the venting position to quickly release pressure (steam) from cooker until float valve drops. Carefully remove lid; transfer apples to a medium bowl. Discard spice pouch.
Melt butter in a small skillet over medium. Cook, stirring often, until lightly browned and fragrant, about 2 minutes. Vigorously stir butter into apple mixture, mashing apples with the back of a spoon until desired consistency. Serve on latkes, if desired.
