Sweet, plump, and juicy, with tons of tiny seeds within. Look for firm but not underripe berries. If you can find the tiny wild ones, dig in. Loaded with natural thickening pectin.
Inky-black berry with thicker skin and more pucker than a blueberry. Makes a great tart jam, or a great tart tart.
Perfect raspberries are soft, small, and amazingly perfumed. They spoil quickly. Balance the sweet, floral flavor with just a dollop of tangy crème fraîche.
